I could never be a vegetarian. I simply do not like vegetables much. I have been trying to eat more veggies but it has not been easy. Salad after salad after salad gets pretty boring. In the past, I would buy the bag-o-salads that had the dressings and toppings included in the package. Now though I am buying other types of “greens” – without all the nummy toppings. The problem I am having though is that I feel like I am eating a bunch of leaves just picked from a tree. Ugh. The texture is different than the usual iceberg I have eaten my whole life. And since you cannot have much dressing, the leaves all fall off the fork when you try to put them in your mouth. I suppose I could eat one leaf at a time. At least they wouldn’t end up on my plate a few times before I can actually get them into my mouth.
